Gluten free couscous and almond salad

What’s in it:

1 cup water
1 teaspoon ground cinnamon
1 cup Gluten free couscous
½ cup sultanas
1 small red onion, halved & thinly sliced
2x 400g tins chickpeas (drained & rinsed)
½ cup slivered almonds, toasted
¼ cup chopped flat leaf parsley
Olive oil & salt and pepper to taste


How to:

Bring water and cinnamon to boil. Place couscous and sultanas in large bowl add water and cinnamon, cover. Allow to stand for 5 mins, stir with a fork to separate grains. Add onion, chickpeas, almonds, parsley and oil. Season with salt and pepper.
